My desire is to set the DirecTivo to record at 720x480 instead of the 480x480 default so I don't have to transcode the video to DVD resolution manually. Is this possible?

As far as I know it's not, since the DTIVO doesn't even have an encoder chip, it just grabs the raw stream from the satellite. So, what you see is what you get.
