I just purchased a Tivo Series 2 (40 hr), and don't totally understand how Season Pass works.

Say I am interested in recording the new episodes of the Simpsons - so I want to record the Simpons every Sunday night at 8:00 pm. When I add a Simpson's season pass, I get ALL episodes of the Simpsons (4-5 per day).

Can I somehow configure Season Pass to do this for me, or do I have to manually schedule the Sunday night shows?

Hit the tivo button and go into Pick programs to record, season pass manager, Simpsons, change recording options, change show type to (First run only). This should solve your problem but not always if you still contine to get 4 or 5 episodes a day you will have to manually record it every week. This works for about 95% of series but the only one it didn't work for me was The Simpsons I used to get about one a day.

I had the same problem with The Simpsons, I just did it manually.
